Rice With Prawns

A subtle rice dish which can be served as a starter or main course.

250grm Aroborio Rice

300grm Peeled Shrimps

2 tbsp Olive Oil

1 Onion, diced

2 Garlic Cloves, diced

½ Lemon, zested

½ Lemon, juiced

200ml White Wine

500ml Vegetable Stock

200grm Butter

150grm Pecorino Cheese


Salt and Pepper

Heat the olive oil in a large pan.  Fry the onions and garlic, once they have softened, add the rice and mix gently.  Add the white wine.  Give a gentle mix.  Add the white wine, lemon juice and zest.  Cook on low heat for 2 minutes, stirring from time to time.  Add the Prawns, salt and pepper to taste.   Mix Gently until well incorporated.  Reduce the stock.  Add the butter, and mix well.  When serving top with pecorino cheese and parsley.
