Gnocchi Gamberi e Pistacchio

Gnocchi are a varied family of dumpling in Italian cuisine. They are made of small lumps of dough most traditionally composed of a simple combination of wheat flour, egg, salt, and potato. Prawn sauce can make a delicious accompaniment to this type of pasta dish.
30 Minutes 4 Starter

1 pkt Gnocchi

700grm Fresh Prawns

40grm Butter

200grm Cherry Tomatoes

2 tbsp Olive Oil

2 Garlic Cloves Peeled and Crushed

50 ml White Wine or Veg Stock

400ml Tomato Salsa

100grm Baked and Chopped Pistacchios

Fresh Basil

Paremesan Shavings

Salt and Pepper

In a boiling pan cook the gnocchi according to packet instructions.  Heat a large pan.  Add the olive oil and saute the garlic.  Add the prawns.  Only half cook the prawns, remove and set aside.  Fry cherry tomatoes in the same pan and add the white wine and the tomato sauce.  Sprinkle some salt and pepper.  Add the cooked gnocchi and prawns to the sauce.  Add the butter and slow cook for another 3 minutes.  Serve with chopped basil, pistacchios and parmesan shavings.
