Fish Kebabs

Fish kebabs are ideal for barbecues and grilling.

1pc Tuna Steak, cut in large cubes

1pc Salmon Fillet, cut in large cubes

1pc Swordfish Steak, cut in large cubes

1 Red Pepper, cut in cubes

1 Yellow Pepper, cut in cubes

1 Onion, cut in cubes

1 Lemon, juiced

1 Garlic, crushed

1 Tbsp Olive Oil

Handful of Chopped Parsley

  1. Soak the kebab sticks a few hours before using them. In a large bowl mix together the olive oil, lemon juice, garlic and parsley.  Add in the cubed fish, season with salt and pepper.  Put in the fridge and leave to marinate for 1 hour.
  2. Thread a piece of pepper, salmon, onion, swordfish, pepper, tuna and finish with a pepper on each skewer.
  3. Heat the bbq or grill and cook for 10 minutes, turning the kebab regularly to cook evenly on each side.
  4. Serve with some fresh rocket leaves and cherry tomatoes
