Neonati Fish Cakes

Method Put neonati into a sifter to drain excess water.  Mix in the garlic, parsley, salt, pepper and chili.  Add the egg and mix really well.  Dust a plate with a little of the extra flour.  Divide the neonati into 6 portions.  Lightly shape and pat into circles about 2cm thick, dusting them with flour as you go.  Allow to rest in the fridge for 1 hour before cooking to allow them to firm up a little.
