Stir fried seafood with garlic and peppercorn
Ingredients

4 peeled garlic cloves
2 tbsp vegetable oil
2 medium sized prawns
70g squid cubes
4 scallops
4 razor clams
Pinch of ground white pepper
1 tbsp fish sauce
1 tsp yellow bean paste
1 tbsp soya sauce
¼ tsp sugar
1 ¼ tbsp chicken stock
5g peppercorns
Fresh coriander

Method

Heat the oil in a wok until very hot, add the garlic and when it is golden brown, add the seafood and stir fry for about 1 minute until half cooked.  Add the ground pepper, sauce, sugar and stock them simmer for 2 minutes.  Add the peppercorns and the coriander, and then transfer to a serving dish lined on one side with the salad leaves.

For garnish, serve with coriander leaves and broccoli florets.

Suggestion

Garlic must be pushed through a garlic press.
