Grilled fillet of salmon laid on a cucumber salad, avocado tomato black olive dressing
Ingredients

150g salmon fillet
2 tsps of olive oil
60g peeled cucumber
2 tomatoes skinned
60g black olive stoned and chopped
1 tbsp chopped fresh coriander
4 chinese cabbage leaves
2 tablespoons vinaigrette
2 tsps  lemon juice
50g diced mushrooms
1/8 of avocado
1 tsp sweet chilli sauce

 
Method

Grill both sides of filets of salmon with 1 teaspoon of olive oil and lemon juice and set aside.

Boil Chinese cabbage leaves in salty water.

For the dressing, diced avocado, diced black olives, tomato concasse, sweet chili sauce, chopped coriander, 2 teaspoons of olive oil.

To serve, dress the salad with vinaigrette and place in the centre of the plate.  Arrange the Chinese cabbage on top and then the salmon.  Serve the dressing around the dish.
