Fancy Crispy Salmon with Crab Meat Mash and Sun dried Cherry Tomatoes
Ingredients

200g salmon
120g mashed potato
50g crabmeat
2 teaspoons chives
1 teaspoon olive oil
1 tablespoon butter
1 tablespoon parsley, chopped
12 half sun-dried cherry tomatoes

 
Method

To prepare the salmon.  Slice the salmon from the skin and season with garlic, rock salt, basil, marjoram and mint.  Pan-fry the salmon in a non-stick pan with some olive oil.  Skin side down, press the salmon with your finger for about 2 minutes until the skin is crispy.  Turn the salmon and cook for another 2 minutes.

Mashed potatoes

Boil the potato; when ready it with a fork.  Add some cream and butter, crabmeat, parsley and chives.

To Serve

Put the crab mash in the middle of the plate, salmon on top of the mash.  Surround the plate with sun-dried cherry tomatoes.  Drizzle with some herb oil.
