All fresh and frozen fish are mainly imported from EU companies that are under the HACCP plan and their processing facilities are covered by an EU approval number. Frozen fish are delivered in reefers having satellite monitored temperatures at -20 degrees Celsius. The frozen fish is unloaded in our premises under controlled temperatures and stored in our cold stores at -18 degrees Celsius before being processed in our processing facilities at St. Paul’s Bay. Following the processing of the frozen fish, it is delivered to the local restaurants and supermarkets by experienced delivery men who are all certificated as food handlers with our fleet of refrigerated vans.
Fresh fish is imported by planes from overseas in polystyrene approved boxes. A veterinary inspector certifies the fish at the airport before loading it onto our refrigerated vans. The fish is delivered to our premises, unloaded in our cold stores at +4 degrees Celsius and covered with fresh ice. The fresh fish is delivered to our associated fish shops, catering establishments, supermarkets and restaurants. Local fresh fish is bought daily from the Maltese Fish Market which is supplied by EU registered vessels every morning, weather permitting. The fish is transported to our fisheries in St. Paul’s Bay by refrigerated vans and sold through our main fish shop at St. Paul’s Bay. Our fisheries are supplied by a 10 ton ice machine which supports our daily fresh fish. Azzopardi Fisheries has an EU export establishment of which we are operating for all of our exports. This establishment has been approved in 2003 by the Veterinary Department with number MF26.
